Borough Market has changed a fair amount over the years that I’ve been working in the area, and pleasingly, almost completely for the good. Some may find it a little busy nowadays, but I think this a healthy reflection on both the market and Londoner’s increasing interest in, and indulgence of, quality food and ingredients. (Besides, aren’t markets are supposed to be full of bustle, loud and fun?)
Perhaps the most telling legacy and success of the market is one you can’t see when you visit it’s aroma filled stalls and shops, but is shown by the spread and growth of other food and ‘French’ markets across the capital. Food awareness is feeding demand for higher quality ingredients and a more ‘personal’ food shopping experience; long may it last.
